Happy 4 Months: Swordfish and Spaghetti Citrus Pesto
on March 24th, Iz and I acknowledged our 4 months of being together. It doesn't seem like a long time, but we have definitely learned a lot about each other these past 4 months in addition to being him being one of my best friends before. I wanted to do something special for him, so I decided to cook him dinner! I wanted to cook something I knew I wouldn't burn, so I stayed away from grilling steak or pork. I looked through my Giada Everyday Pasta cookbook, and bumped into this recipe: Swordfish and Spaghetti CitrusPesto.
I had a few problems, but nonetheless it was very light and flavorful meal. The swordfish was cooked to perfection! The meat was so soft and fluffy. I had a few problems making the pesto though! The blender was not working properly, some of the ingredients were not grind or chopped. I served the spaghetti shortly right after I had added the pesto into the bowl of spaghetti, but that was probably a mistake, because it was still bland. I should have let it marinade for a little bit before serving. Oh well! the spaghetti was a good snack later on though :)
The picture probably does not look so appealing but taste wise, it was pretty good! Try it out, it's simple and easy to make.
The rest of our night was relaxing We slow danced in the living room to "For the Love of You" by the Isley Brothers and finished it off with eating his favorite: strawberry ice cream. :)
