Broiled Salmon with Spinach and Feta Saute
It was a girls' night on Labor Day evening. Lynn, Michelle, Amanda and I decided to make dinner. We looked through Amanda's cook book and the picture of a salmon caught our eyes. We decided to make broiled salmon with spinach and feta saute. If you're looking for a very simple, healthy, and filling dish, THIS IS THE DISH TO MAKE. When I say it's simple, trust me IT'S SO SIMPLE. This recipe was created by Martha Stewart.
Here are the ingredients and directions:
"Serves 4
* 4 skinless salmon fillets (6 ounces each)
* Coarse salt and ground pepper
* 1 tablespoon olive oil
* 2 bags (5 ounces each) baby spinach
* 1/2 cup feta, crumbled (2 ounces)
* 1/3 cup pine nuts
* 2 teaspoons fresh lemon juice
Directions
1. Heat broiler, with rack set 4 inches from heat. Place salmon on a rimmed baking sheet; season with salt and pepper. Broil until opaque throughout, 5 to 7 minutes.
2. Meanwhile, in a large skillet, heat oil over medium. Add as much spinach as will fit; season with salt and pepper. Cook, tossing spinach and adding more to skillet as space becomes available, until tender, about 2 minutes. Remove from heat; drain off excess liquid. Stir in feta, pine nuts, and lemon juice. *Because the pine nuts were expensive, we decided to saute mushrooms and sun dried tomatoes with the lemon juice and feta instead, AND we bought a bag of 6 frozen salmon from Albertsons for $12.99.
The portions seemed small when we served dinner, but to our surprise it was indeed filling. Of course, I probably could have eaten more, but the portion was perfect. It was nice to be full, but NOT FEEL full.
